Two Of My Favourite Chocolate Cake Recipes

Chocolate cake with orange zest

50gr (1¾ oz) butter, melted
8 tbsp sugar
3 eggs
2 tbsp flour
50gr (1¾ oz) cocoa powder
1 tsp baking powder
Zest of one orange
Orange extract

Directions:
Mix together butter and sugar, add the eggs (one at the time), and stir with a wooden spoon until perfectly blended.
Preheat the oven at 180ºC (356ºF). Add the flour one tablespoon at the time (two should be enough to obtain a smooth cream, but feel free to add more if necessary), cocoa and baking powder, orange zest and extract. Mix well until all ingredients are blended.
Grease a cake tin and dust with flour. Pour the mix and bake for 40 minutes.

If you need something more sophisticated, or if your oven is broken, try a tiramisu sponge cake.

Nesc-choc cake

3tbsp Nescafé coffee
1 tbsp bitter chocolate powder
3 eggs
150gr (5 oz) flour
150gr (5 oz) butter
1 pinch of salt
1 tsp baking powder
100gr (3½ oz) sugar

Directions.
Preheat the oven at 180ºC (356ºF).
Work the butter with a wooden spoon until creamy and fluffy. Add the rest of the ingredients in the following order: sugar, salt, cocoa powder, Nescafé, eggs, flour and baking powder. Add one tablespoon or one unit of each ingredient at the time, and make sure it is perfectly blended in the cream before adding the next one.
Grease a cake tin with butter and dust with flour. Pour the cream and bake for 15 minutes, then raise it to 200ºC (392ºF) for 30 more minutes.
Once it’s baked there are different options you can choose from:
Coat with caster sugar
Cover with icing
Cut it lengthwise into two discs and fill it with chestnut jam
Or, and this is by far my favourite, cut it into small pieces and coat each one of them with melted dark chocolate, let it solidify and dip them in a chocolate fountain, get a huge chocolate fountain for hire and organize a chocoparty with all your friends. They will be your friends forever!
